Be sure to use their pitch rate calculator. I was a bit behind and decided to just re-hydrate and pitch. After I noticed in yellow, printed on white, a ratio of 1G/L I freaked out a bit. The 11G obviously is 11L or 2.9 gallons, and I did not make a 2.9 gallon batch. Fortunately I had more yeast around. Regardless of the printed instructions, the pitch rate calculator has this @ 33G (11.8 brix @ 5 gallons), so there is even a disparity in the printed instructions.

Also note that if you use the Koln yeast it is reported by the manufacturer to be laggy, and man is it ever. close to two day @ 64.5 degrees
