  • Water treatment (PH, Gypsum, Salts, minerals)
  • Recipe development (Must consider, substitutes, etc.)
  • Mash techniques/temperatures. (142-156degrees and reasons, ferulic rest, protein rest, etc.)
  • Start talking about ACBW 2025, Brewing a batch for Old Ox out a Middleburg, etc.

Just as a heads up. We have a bit of an overlap with an Old Ox Order of the Ox event tonight. So, when you arrive go to the back room behind the bar for our meeting. The Old Ox event will be in the tasting room and wrapping up as we get started, Be flexible as well, this is the plan, but it may change as it is a fluid schedule.
